- 1Toast the bread in a toaster or oven until golden and crisp.
- 2In a small bowl, mash the avocado with a fork and stir in the lemon juice, salt, and pepper.
- 3In a small skillet over medium-high heat, melt the butter or heat the oil and crack the eggs. Cook for about 3 minutes, or until the whites are set and the yolks are runny, or to your liking. Season with salt and pepper.
- 4In another small skillet over medium-high heat, wilt the spinach with a splash of water, stirring occasionally, for about 2 minutes, or until soft and bright green. Season with salt and pepper.
- 5Spread the avocado mixture evenly over the toast slices, and top with the fried eggs and the spinach. Add your choice of toppings if desired. Enjoy!
